Since these protein molecules have well-defined hydrophilic and hydrophobic regions on their surface, once exfoliated, the hydrophobic regions could readily adsorb on the basal plane of graphene resulting in stable dispersions (Figure 2.18f-j). The stability can be attributed to the reduced surface energy difference between the graphene and hydrophobic region of the protein, and the solvent and hydrophilic regions of the protein.225 Other variants of hydrophobins with specific functionalities were also shown to efficiently exfoliate graphene.
